  1. Cortar la cebolla en juliana, el ajo en láminas y el atún en tacos
  2. Poner la mitad del aceite a calentar y cuando esté listo en dos tandas ir sellando el atún durante unos segundos. No le pongo sal al atún, ya que normalmente no lo necesita. Reservar
  3. Echar el resto del aceite e incorporar la cebolla, ajos, pimienta en grano, sal y laurel
  4. Pochar la cebolla a fuego medio lento durante unos 20 minutos.
  5. Cuando la cebolla esté lista subir el fuego y añadir el vinagre, remover unos segundos y añadir el pimentón y orégano. Retirar del fuego y remover
  6. Volver a poner al fuego y agregar el agua y el atún. Dejar a fuego medio removiendo con suavidad hasta que el agua se consuma un poco. Más o menos unos 1 o 2 minutillos (ya se cocinó un poco con el sellado). No conviene dejar mucho, ya que el atún se resecaria. De esta forma queda muy jugoso.
    Probar un poco y si se desea al gusto poner más vinagre o sal.
